Guacamole Salsa!
Guacamole SalsaCinco de Mayo is a few short weeks away and if you're planning a Mexican-themed celebration for the holiday (or if you want an excuse to eat chips and dip for a day), you'll love us for this!  Guacamole Salsa can be made thicker like real guacamole or thinner like a salad dressing. If you're feeling creative, you can even spread it on your turkey sandwiches for a bunch of flavor without adding any fat!

What you need:

  • 1 lb. tomatillos (or more if you want it thinner)
  • 1 jalapeno pepper (or more if you like it spicy)
  •
1/3 bunch cilantro
  •
1 thick slice of onion
  •
1 garlic clove

  • 1 avocado

  • 1 tsp. salt

What you do:

Peel and wash the tomatillos (they are usually found by the cilantro and peppers in the grocery store and have a husk on them). Cut them into quarters and put in the blender.  Follow with the jalapeno, cilantro, onion, garlic, avocado, and salt. (TIP: Put the tomatillos in the bottom of the blender because the avocado will stick to the blade. Once it gets going the juice from the tomatillos will help move the other ingredients around.) AND THAT'S IT! This recipe is so easy and SO delicious. The best part is that it should last for about a week in the fridge (if you don't eat it all first!!).

It's almost Derby time!

Did you know that on May 17, 1875, in front of an estimated crowd of 10,000 people, a field of 15 three-year-old horses contested the first Kentucky Derby.  Check out Wikipedia for the full history of the Kentucky Derby.  In the mean time, ladies- get our your biggest, fanciest hat out to wear and gentlemen- begin making the mint julep's (click here for the recipe which even includes the history of the drink!).
